I recently moved house, and so I have a new kitchen! We had our first "dinner party" and I made these. Unfortunately by the time I came to make the chocolate sauce I was a little (very) drunk, and so it was less "sauce" and more "solid". So, take my word for it that they taste better than they look!
Ingredients (makes approx. 24)
60g plain flour
1 tsp sugar
50g butter
2 eggs, beaten
275ml (½ pint) double cream, whipped
200g dark chocolate
Begin by making the choux pastry:
Take a piece of baking parchment, fold it in half, open it out again and sift the flour and sugar on top.
Put 150ml cold water along with the butter into a medium-sized pan and put onto a medium heat. Turn the heat off as soon as the butter has melted and the mixture come to the boil.
Tip in the flour and sugar mixture (all at once) with one hand, whilst stirring vigrously with the other.
Beat together until you have a smooth ball of paste, that leaves the sides of the pan clean. Beat in the eggs, a little at a time until you have a smooth, glossy paste.
Grease baking trays and hold under cold water for a few seconds, tap to get ride of excess moisture. (According to Delia "this will create a steamier atmosphere, which in turn helps the pastry to rise").
Place teaspoonfuls of the mixture onto baking trays, leaving about an inch between each. Bake in a preheated 200°C/gas 6 oven for 10 minutes, and then increase the temperature to 220°C/gas 7, bake for a further 15-20 minutes, until the buns are crisp, light and a rich golden colour.
Immediately after removing from the oven pierce the side of each to let out the steam. Cool them on a wire rack.
To make the chocolate sauce:
Melt the chocolate with three tablespoons of water in a bowl over a pan of simmering water. Let it melt and stir until you have a smooth sauce. Remove from the heat.
To serve:
Split each bun in half and spoon in some of the whipped cream. Pile 'em up high and serve with the chocolate sauce.
