DAY 3 - Verdict (+ Pancakes & Molten Chocolate Babycakes!)

I had friends round for dinner this evening, and far be it for me to inflict pure cake for dinner on them, so I decided to whip up some pancakes. Delia's recipe is best, you can find it here. I made 2 sauces to go with the pancakes.
The first a creamy mushroom sauce - fry a sliced onion and a crushed garlic clove in some sunflower oil, add about 75g of sliced button mushrooms, 100g soft cheese and 2 tbsp milk. Cook over a gentle heat until the mushrooms and onion are softened.
I also made a tomato-y sauce - fry a sliced red onion and a crushed garlic clove in some sunflower oil, add 1 punnet of quartered cherry tomatoes, ½ tin of peeled plum tomatoes, a tsp of brown sugar and a tbsp tomato purée. Cook gently until the cherry tomatoes have softened, and then add a handful of torn spinach leaves before serving.


A very enjoyable dinner of Delia's pancakes and the sauces along with a bit of grated cheddar. This kind of 'cake' I like!

For dessert I made Nigella's Molten Chocolate Babycakes (from her app), here is the recipe I adapted for 3 people.


Molten Chocolate Babycakes

Serves 3
1. Preheat the oven to fan 180°C, and put a baking tray inside. Butter 3 ramekins.
2. Melt 175g dark chocolate in a bowl over a pan of simmering water, take off the heat and let it cool slightly.
3. Meanwhile cream together 25g softened butter and 75g caster sugar.
4. Add  2  beaten eggs, a pinch of salt and a tsp of vanilla extract.
5. Add 25g of plain flour, and mix until well combined.
6. Add in the cooled melted chocolate and spoon evenly between the 3 ramekins.
7. Bake in the oven for 10-12 minutes, tip out into small bowls immediately and serve with cream or ice cream.

Today's diet...contains quite a lot of cake!!

Verdict - today's day of cake was good, the filling in the pancakes helped a lot, and the tasty chocolate cake for pudding went down a treat. I could get used to this life of cake...
