Secret Chocolate Brownies

Now there is something a little bit special about these chocolate brownies, they have a shhhh secret ingredient. And this time it's not mashed potato...



Chocolate brownies - the 'healthy way'

Ingredients (to make 10)
50g dark chocolate (at least 70% cocoa solids)
50g gluten-free plain flour
15g Green & Black's cocoa powder
¼ tsp bicarbonate of soda
25g caster sugar
25g light brown sugar
½ tsp vanilla extract
1 tbsp skimmed milk
1 small egg
50g mayonnaise(!!)




1. Break the chocolate into pieces and put in a bowl over a pan of simmering water. Once it is melted remove from the heat and allow to cool briefly.
2. Add the two sugars into the chocolate and stir, next pour in the vanilla and milk and add the egg. Finally, dollop in the mayonnaise and stir until all the ingredients are combined.
3. Sieve over the flour, cocoa and bicarb and fold in with a metal spoon, do not over mix.
4. Divide the mixture between cake cases and put in a 160°/gas 4 oven. Cook for about 20 minutes until risen and firm to the touch.
5. Remove from the oven and put on a wire rack to cool. It's best to store these brownies in an air-tight container in the fridge.


And the good news? You can't taste the mayonnaise! These are very tasty little treats, and you needn't feel guilty about scoffing a couple with a nice cup of tea!


The great thing about these brownies is that the fat content is greatly reduced. I got the idea of using mayonnaise instead of butter from here. I adapted the recipe to make them even healthier and cooked them in cake cases as I didn't have a small enough tin. Each brownie has approximately 107 calories and 6.3g fat (this compared to a Starbucks gluten-free brownie that has 334 calories and 20.6g fat!!)
