Seeded Drop Rolls

This is bread-making as you've never seen before, in a matter of minutes these little rolls are ready. Now, they might look slightly odd, but who says it'll all about looks, it's what's inside that counts, right...
These are perfect if you need to bake something for a picnic and don't have time to make bread properly. They are good served with a little butter or cheese, or even on their own.

Ingredients
225g gluten-free plain flour (or normal if you can)
2 tsp baking powder
½ tsp bicarbonate of soda
pinch of salt and pepper
50g butter
1½ tbsp sunflower oil
185ml skimmed milk with a squeeze lemon juice (or 185ml buttermilk if you have it)
60g sunflower seeds

Granola Bars

Firstly, I want to say a MASSIVE thanks to all those who contributed a guest post. I loved reading what other people have been making, and it has filled me with inspiration! It feels good to be back in the hot-seat though!

When I'm at work and need a snack I often turn to cereal bars, I have found a few healthy ones (where I can pronounce all of the ingredients, and sugar isn't the number one ingredient), but they are expensive and tend not to be very filling.

My recipe does contain sugar, but considerably less than a lot of the granola bar recipes I found.  Although they aren't particularly low in calories or fat (175 calories and 6.7g per bar) they give good slow-releasing carbs from the oats and fruits and have good fat from the seeds and nuts. The great thing about these granola bars is you can substitute whatever you have in your cupboard for the ingredients below, as long as you keep the ratio of wet and dry ingredients more or less the same. For example you could try pumpkin seeds instead of sunflower seeds, hazelnuts instead of walnuts and apricots instead of figs.

A Week of Cake - DAY 2 - Chilli and Feta Cake

After a small meltdown last night when I wondered what on earth I was doing, I was slightly dreading breakfast this morning. However, after a tasty blueberry muffin and a small Welsh cake (they taste better, and don't fall apart when cooled) I was ready to start the day.

One of the things that has kept me going so far is a feta cheese and chilli cake which I adapted from a savoury cake on the BBC Good Food website.

Chilli and Feta Cake

Ingredients
200g white flour (I used gluten-free as the original recipe suggests, but any plain flour would be fine)
1 tsp salt
3 level tsp baking powder
300ml buttermilk or milk with a squeeze of lemon juice (I used about 100ml buttermilk with 200ml semi-skimmed milk and 1 squeeze of lemon juice)
3 eggs
1 tbsp tomato pureé
1 fresh red chilli, deseeded and finely chopped
2 tbsp olive oil
100g feta cheese, chopped into cubes
50g mixed seeds
