Chocolate Fakes

Nope it's not a typo...these are fake cakes. They could be called cakes, but they aren't full of sugar or fat (and don't taste as good) so I have decided to call them Fakes...


To make about 8 Chocolate Fakes you will need:
1oz butter, softened
2 teaspoons olive oil
1 egg
1 tablespoon fruit puree (I used the pots for babies, Apple and Blueberry)
3oz ground almonds
2 teaspoons cocoa
½ teaspoon baking powder
1½ teaspoons stevia or xylitol (or sugar to taste if you can have it)
½oz mixed chopped nuts


Method

It's a very simple method. Basically chuck the wet ingredients into a mixing bowl (butter, oil, egg, fruit puree) and whisk until creamy.

Then add the dry ingredients (ground almonds, cocoa, baking powder, sweetener). Mix together and finally stir in the nuts. (Don't worry if the mixture looks a bit lumpy)

Spoon the mixture into cupcake cases and bake in a 180°C preheated oven for about 15 minutes, until the are risen and firm.
Serve with cream or custard.


I'm not going to lie and say these are the nicest cakes in the world (without sugar it's not possible!) BUT they do have a lovely cakey texture and the fruit puree give some sweetness. Add a bit of custard or cream and you're golden!
The good thing about these is they are free from refined sugars, have very little fat (and most of it is good fat) and have protein from the nuts. The recipe idea is from Rose Elliot's 'Chocolate Cake'.
