N is for... Naughty Chocolate Birthday Cake

Happy Birthday to me! Yesterday I turned the grand old age of 25, no longer can I claim to be 'early-twenties'...that being said I don't feel any different - I still love cake for starters! Many people might find it sad to make their own birthday cake, however not me. The treat of having a day off work meant I had time to bake - a nice leisurely bake (unlike the high pressure Great British Bake-off - I could not cope there!)

Although it's a special day, I'm afraid the low-carb diet stops for nothing and no one. I found a recipe in GoodFood 101 Cakes & Bakes for 'Seriously Rich Chocolate Cake' and I low-carbed it up while keeping it delicious, hence the naughty - it's full of full-fat butter and chocolate!

You don't have to be 25 to enjoy this cake

Ingredients
50g butter
75g good quality, very dark chocolate (I used 85% cocoa solids)
3 eggs, separated
70g ground almonds
1 teaspoon baking powder
40g xylitol





Method
Step 1
Place a heatproof bowl over a pan of simmering water. Put the butter and chocolate in the bowl and leave to melt. You can occasionally stir it, but don't be tempted to do this too much as it can turn a nice melted liquid into a solid disaster...
Step 2
Meanwhile, put the egg whites into a large bowl and whisk with a pinch of salt until soft peaks are formed. I cheated and used an electric mixer.
Step 3
Remove the melted chocolate and butter and transfer to a large bowl. Leave to cool for about 5 minutes. Stir in the egg yolks, ground almonds and baking powder.
Step 4
Add the xylitol to the egg whites (or alternatively for a regular carbed version use 40g of caster sugar) gradually, whisking all the time until it is all added and stiff peaks have formed.
Step 5
Spoon two tablespoons of the egg white mix (one at a time) into the chocolate mix and stir together. Gradually fold in the rest of the egg whites.
Step 6
Grease and line the bottom of it a 15cm, loose bottomed tin. Spoon the mixture into it and bake in a 170°C/gas 3 preheated oven for 20 minutes. The cake should be risen and just firm. Don't check with a skewer as you want a moist cake. Cool in the tin.
Serve
My cake sunk a little in the middle, so I whipped up some cream cheese icing to cover it up. No exact science for this I'm afraid. I whisked together some soft cheese, xylitol, cocoa and melted chocolate until I had a smooth icing. I spooned it into the middle and spread to the edges. Strawberries sliced in half gave it a fruity finish!

Per serving (for six) 256 calories, 7.3g protein, 2.9g carbohydrate (of which sugars 1.7g), 22g fat (of which saturates 9.6g), 2.5g fibre. Net carbs 0.5g.*
*carb contents of chocolate vary so bear this in mind.
